Ingredients:
- 1 whole chicken, cut into pieces
- 4 cups chicken broth
- 2 cups water
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons butter
- Fresh parsley for garnish
Instructions:
In a large pot, combine chicken, chicken broth, water, onion, carrots, celery, garlic, thyme, bay leaf, salt, and pepper
Bring the mixture to a boil, then reduce heat and simmer for 30 minutes or until the chicken is cooked through and vegetables are tender
In a mixing bowl, whisk together flour, baking powder, and salt
Add milk and melted butter to the dry ingredients, stirring until just combined
Drop spoonfuls of the dumpling batter into the simmering soup
Cover and cook for an additional 15 minutes or until the dumplings are cooked and fluffy
Remove the bay leaf and discard
Serve the chicken and dumplings soup hot in a white bowl, garnished with fresh parsley on top
