This Easy Shrimp Fried Rice recipe will satisfy your craving for restaurant-quality fried rice in the comfort of your own home. It's quick, delicious, and loaded with flavorful shrimp, veggies, and fluffy rice.
Ingredients:
- 2 cups cooked rice
- 1/2 lb shrimp, peeled and deveined
- 2 eggs, beaten
- 1 cup frozen peas and carrots, thawed
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Green onions for garnish optional
Instructions:
In a big skillet or wok, heat up one tablespoon of vegetable oil on medium-high heat
Scramble the beaten eggs until they are fully cooked
Take out and place aside
Add one more tablespoon of vegetable oil to the same skillet
Cook the shrimp until they become opaque and pink
Take out and place aside
When the garlic and onions are fragrant, add the remaining vegetable oil to the skillet and continue to cook them
Add the cooked rice and stir, breaking up any clumps, for a few minutes
Add cooked shrimp, scrambled eggs, and thawed peas and carrots
Blend thoroughly
Stir the mixture after adding the sesame oil and soy sauce
To taste, add salt and pepper for seasoning
If desired, garnish with finely chopped green onions
