Flourless Double Chocolate Hazelnut Cookies



Indulge in the rich flavors of these flourless double chocolate hazelnut cookies. With hazelnut meal as the base, cocoa powder, chocolate chips, and chopped hazelnuts are added to create a decadent treat for chocolate and nut lovers. These cookies are gluten-free and bursting with delightful textures and tastes.

Ingredients:

  • 1 cup hazelnut meal
  • 1/3 cup cocoa powder
  • 1/2 cup powdered sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips semi-sweet
  • 1/4 cup hazelnuts chopped
  • 1 large egg
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine the hazelnut meal, cocoa powder, powdered sugar, baking soda, and salt

Add the chocolate chips and chopped hazelnuts to the dry ingredients mixture

In a separate bowl, beat the egg and then mix in the melted butter and vanilla extract

Combine the wet and dry ingredients, stirring until a thick cookie dough forms

Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them apart

Gently flatten each cookie dough mound with the back of the spoon

Bake in the preheated oven for about 10-12 minutes

The cookies should be set around the edges but slightly soft in the center

They will firm up as they cool

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
