Kale, Sweet Potato, and Quinoa Fritters



These Kale, Sweet Potato, and Quinoa Fritters are a delicious and nutritious snack or side dish. Packed with quinoa, kale, and sweet potatoes, they are a great way to incorporate healthy ingredients into your diet.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup finely chopped kale
  • 1 cup mashed sweet potatoes
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for frying

Instructions:

To make the mixture, put cooked quinoa, chopped kale, mashed sweet potatoes, grated Parmesan cheese, breadcrumbs, chopped onion, minced garlic, beaten egg, salt, and black pepper in a large bowl

The ingredients should be mixed well so that the mixture stays together

Put olive oil in a pan and heat it over medium-high heat

Take a scoop of the fritter mix and form it into a patty

They should be cooked for about 34 minutes on each side in a hot pan until they are golden brown and crispy

Take the fritters out of the pan and put them on a plate lined with paper towels to soak up any extra oil

Enjoy while hot!
