These Vegan Portobello Pizzas are a tasty and healthy take on regular pizza. They're great for a quick and filling meal because the crust is made of tasty Portobello mushrooms and the toppings are vegan cheese and a mix of vegetables.
Ingredients:
- 4 large Portobello mushroom caps
- 1 cup vegan tomato sauce
- 1 cup vegan mozzarella cheese, shredded
- 1/2 cup bell peppers, diced
- 1/2 cup red onion, diced
- 1/4 cup black olives, sliced
- 1/4 cup fresh basil leaves
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
Preheat your oven to 375F 190C
Remove the stems from the Portobello mushroom caps and gently scrape out the gills to create a mushroom 'bowl'
Brush each mushroom cap with olive oil and season with salt and pepper
Place the mushroom caps on a baking sheet lined with parchment paper
Spread a spoonful of vegan tomato sauce inside each mushroom cap
Top with vegan mozzarella cheese, bell peppers, red onion, and black olives
Bake in the preheated oven for 20-25 minutes or until the mushrooms are tender and the cheese is melted and bubbly
Remove from the oven and sprinkle with minced garlic and fresh basil leaves
