Shortbread Toffee Cookie Bars



The buttery shortbread, rich chocolate, and crunchy toffee bits in these Shortbread Toffee Cookie Bars make them a treat. They're a great sweet treat for any event!

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 1 cup toffee bits or chopped Heath bars

Instructions:

Warm the oven up to 175F 350C

Mix the brown sugar and butter together in a big bowl until the mixture is smooth

Mix the egg yolk and vanilla in well by beating them in

Add the flour and salt and mix just until they are combined

Spread the dough out evenly in the bottom of a 9x13-inch baking pan that has not been greased

In a hot oven, bake for 25 to 30 minutes, or until the edges are just beginning to turn golden

After taking the crust out of the oven, sprinkle the chocolate chips on top right away

If the chocolate is too hard, wait a few minutes and then spread it out evenly on the crust

Put the toffee bits or chopped Heath bars on top of the melted chocolate and lightly press them into the top

Cool all the way through on a wire rack in the pan before cutting into bars
