Shrimp, Scallop and Tomato Stew With Lemony Orzo



A delightful combination of seafood and fresh flavors, this dish features succulent shrimp and scallops in a vibrant tomato stew, served over a bed of zesty lemon couscous. It's a perfect balance of savory and citrusy notes, making it a delightful meal.

Ingredients:

  • 1 cup couscous
  • 1 cup water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cooked shrimp
  • 1/2 cup cooked scallops
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions:

In a medium saucepan, bring 1 cup of water to a boil

Stir in the couscous, cover, and remove from heat

Let it sit for 5 minutes, then fluff with a fork

In a large skillet, heat the olive oil over medium heat

Add minced garlic and saut for 1-2 minutes until fragrant

Add cherry tomatoes and cook for another 2-3 minutes until they start to soften

Stir in cooked shrimp and scallops, allowing them to heat through for about 2 minutes

Add lemon zest, lemon juice, and chopped basil

Season with salt and pepper to taste

Serve the shrimp, scallop, and tomato stew over a bed of lemony couscous

Garnish with extra basil leaves if desired
