Ingredients:
- 4 chicken breasts
- 2 lemons
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 kg potatoes, cut into wedges
- 1/4 cup chopped parsley
Instructions:
Preheat oven to 200C 400F
In a bowl, mix the juice of 1 lemon, minced garlic, olive oil, dried oregano, salt, and pepper
Place chicken breasts in a baking dish and pour the lemon mixture over them, ensuring they are well coated
Arrange the potato wedges around the chicken in the baking dish
Slice the remaining lemon and place the slices over the chicken and potatoes
Bake in the preheated oven for 25-30 minutes or until chicken is cooked through and potatoes are golden brown and crispy
