It's easy to make this creamy potato cheese soup that's great for a cozy meal. Putting potatoes and cheddar cheese together makes a flavor that is rich and satisfying.
Ingredients:
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1/2 cup heavy cream
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:
Put the chopped onion and minced garlic in a large pot and cook them until the onion is clear
Put the diced potatoes and chicken or vegetable broth in the pot
Get it going, then lower the heat and let it cook until the potatoes are soft
Puree the soup until it's smooth with a blender or an immersion blender
Put the soup back in the pot and melt the cheddar cheese by stirring it in
As you pour in the milk and heavy cream, keep stirring
Add pepper and salt to taste
